This salad is super simple (think 15 minute dinner), delicious, and best of all, its fresh flavors will help you relive all of that summer magic. Cilantro-Lime Chickpea Salad
Makes 2 servings
1, 15.5 oz. can of chickpeas (garbanzo beans), drained and rinsed
1 avocado, peeld, pitted and diced
3/4 of a tomato, diced
1/2 cucumber, diced
1/4 cup fresh cilantro
2 Tbsp. lime juice
Salt and pepper to taste
- Combine chickpeas, avocado, tomato, and cucumber in a medium-sized mixing bowl.
- Stir in cilantro and lime juice. Add salt and pepper to taste.
- Serve and enjoy!
