Citrus & Cilantro Chickpea Salad

Summer may be gone, but that doesn’t mean we have to forgo the flavors!


This salad is super simple (think 15 minute dinner), delicious, and best of all, its fresh flavors will help you relive all of that summer magic. The high fiber (66% of your recommended daily value!) and high protein (almost 19 grams!) content makes it a meal in itself. It also has loads of heart-healthy fat from the avocado, and is chock full of veggie goodness. What’s not to love?!

Cilantro-Lime Chickpea Salad

Makes 2 servings


1, 15.5 oz. can of chickpeas (garbanzo beans), drained and rinsed
1 avocado, peeld, pitted and diced
3/4 of a tomato, diced
1/2 cucumber, diced
1/4 cup fresh cilantro
2 Tbsp. lime juice
Salt and pepper to taste


  1. Combine chickpeas, avocado, tomato, and cucumber in a medium-sized mixing bowl.
  2. Stir in cilantro and lime juice. Add salt and pepper to taste.
  3. Serve and enjoy!
